Kombucha

 

This makes one gallon of Kombucha.

Ingredients

  • 9 black tea bags, (must be caffeinated)
  • 1 cup white sugar,
  • 1 scoby,
  • 1 or more cups of starter kombucha (plain, not flavored).
  • Good filtered water, not tap water as it has chlorine in it and can kill the scoby.
  • A 1 glass gallon container. Not plastic or Metal.
  • Glass measure cup.
  • Plastic stirring spoon, not metal.
  • Something to make your hot tea in like a teapot.
  • Cloth cover and rubber band.

Boil 500 ml water.

Place 9 tea bags in a teapot.
Pour hot water over the tea.
Let sit for 10 to 15 minutes.
Half-fill a clean gallon jar with clean water.
Remove tea bags from the teapot.
Stir in 1 cup of sugar till dissolved.
Pour the strong sweet tea into the jar.

Make sure the temperature of the mixture is room temperature. Scoby doesn’t like hot water! Then add starter tea and scoby to the jar and stir with a plastic spoon.

Cover the jar with the cloth and place the jar away from sunlight and in a location that won’t be moved.
Let it ferment for 1 week for the first process. If you are in a cold climate you may need to keep this in a hot water cupboard.

You can drink just as it is. But you can also add fruit or ginger to it in bottles for the second process. Enjoy!

Kombucha for the Stewardship and Sustainability School

I want to encourage our students, and show them how to make an enjoyable and healthy delicious drink. So each week I make 4 gallons of kombucha for them to enjoy. This school is three months long.
